  • 3 oz Soda Water

Instructions
 

  • Begin by chilling a highball or Collins glass.
  • In a shaker, add the fresh mint leaves and the simple syrup. Gently muddle the mint leaves to release their oils, being careful not to tear them too much.
  • Pour in the absinthe over the muddled mint and syrup mixture.
  • Fill the shaker with crushed ice and shake vigorously for about 10-15 seconds to combine the flavors and chill the mixture.
  • Strain the mixture into the prepared glass filled with crushed ice.
  • Gently top the drink with soda water, allowing it to mix lightly with the absinthe mixture.
  • Garnish with a sprig of fresh mint on top for aroma and presentation.
