Ingredients
  

  • 4 oz ripe peach puree
  • 8 oz sparkling wine (Prosecco or Champagne)
  • 1 oz apple cider
  • 1/2 oz fresh lemon juice
  • cinnamon stick (for garnish)
  • fresh peach slices (for garnish)

Instructions
 

  • In a blender, combine ripe peaches (peeled and pitted) and blend until smooth. You should have about 4 oz of peach puree. If desired, strain through a fine mesh sieve to remove any pulp.
  • In a large mixing glass, combine the peach puree, apple cider, and fresh lemon juice. Stir gently to combine.
  • In a chilled champagne flute, pour the peach mixture until the glass is about half full. Slowly top with sparkling wine, allowing it to mix gently without losing the bubbles.
  • Add a cinnamon stick and a slice of fresh peach to the glass for garnish.
  • Enjoy the Autumn Bellini immediately while it's chilled and bubbly.

Notes

For a sweeter drink, adjust the amount of apple cider to taste. You can also experiment by adding a splash of flavored liqueur such as peach schnapps for an extra kick.
