The Bellini is a refreshing cocktail that originated in Venice, Italy. It combines the sweetness of ripe peaches with the effervescence of sparkling wine, making it a perfect drink for brunch or celebrations.
Blanch the peaches in boiling water for 30 seconds, then transfer to an ice bath. Peel, pit, and chop the peaches.
Blend the peaches in a blender or food processor until smooth. If desired, strain the puree through a fine mesh sieve for a smoother texture.
In a chilled champagne flute, add 1-2 ounces of peach puree.
Slowly pour the Prosecco over the puree, allowing it to mix gently.
Add a splash of fresh lemon juice for a hint of acidity, if desired.
Stir gently and serve immediately while the drink is still bubbly.
Notes
For a more traditional Bellini, use white peaches if available. The drink is best served chilled and can be adjusted with the ratio of puree to Prosecco based on personal preference.
