Equipment

  • Medium saucepan
  • Fine-mesh sieve
  • Heatproof glasses or mugs
  • stirring spoon

Ingredients

  • 750 ml Red Wine preferably a full-bodied variety
  • 1/4 cup Brandy
  • 2 tablespoons Sugar
  • 1 Orange sliced
  • 1 Lemon sliced
  • 1 Cinnamon Stick
  • 4 Cloves
  • 2 Star Anise
  • 1/4 teaspoon Nutmeg freshly grated

Instructions

  • In a medium saucepan, combine the red wine, brandy, and sugar over low heat. Stir gently until the sugar is fully dissolved.
  • Add the sliced orange and lemon to the mixture, along with the cinnamon stick, cloves, star anise, and grated nutmeg.
  • Continue to heat the mixture gently, allowing it to simmer for about 10 minutes. Do not let it boil, as this will evaporate the alcohol.
  • Once heated through and fragrant, remove from heat and let it steep for an additional 5 minutes to enhance the flavors.
  • Strain the mixture through a fine mesh sieve into heatproof glasses or mugs, discarding the solids.
  • Serve warm, garnished with an additional slice of orange or lemon if desired.

Notes

Negus can be adjusted in sweetness by varying the amount of sugar added. For a spicier version, additional spices like cardamom or ginger can be introduced. This cocktail is perfect for holiday gatherings or cozy nights in.
