Equipment

  • Rocks glass

Ingredients
  

  • 2 oz Blended Scotch Whisky
  • 3/4 oz Fresh Lemon Juice
  • 3/4 oz Honey-Ginger Syrup
  • 1/4 oz Islay Single Malt Scotch
  • Candied Ginger for garnish

Instructions
 

  • Fill a cocktail shaker with ice.
  • Add the blended Scotch whisky, fresh lemon juice, and honey-ginger syrup to the shaker.
  • Shake well until the outside of the shaker feels cold, about 20 seconds.
  • Strain into a chilled rocks glass filled with fresh ice.
  • Float the Islay single malt Scotch on top by pouring it over the back of a spoon.
  • Garnish with a piece of candied ginger on the rim of the glass.

Notes

Honey-ginger syrup can be made by combining equal parts honey and hot water, then infusing the mixture with fresh ginger. Allow it to cool before using.
