Ingredients
  

  • 2 oz Pisco
  • 1 oz fresh pineapple juice
  • 3/4 oz fresh lime juice
  • 1/2 oz simple syrup
  • 1/2 oz egg white (optional)
  • Pineapple slice or cherry (for garnish)
  • Ice cubes

Instructions
 

  • Prepare the Ingredients: Start by juicing fresh pineapple and lime. Measure out all the ingredients.
  • Dry Shake: In a cocktail shaker, combine Pisco, fresh pineapple juice, fresh lime juice, simple syrup, and egg white (if using). Seal the shaker and shake vigorously without ice for about 15-20 seconds.
  • Wet Shake: Add ice cubes to the shaker and shake again for another 15-20 seconds to chill the mixture.
  • Strain: Using a fine mesh strainer, strain the cocktail into a chilled coupe or rocks glass to remove any pulp and ice shards.
  • Garnish: Optionally, garnish with a slice of pineapple or a cherry on top for a decorative touch.
  • Serve: Enjoy your Pineapple Pisco Sour immediately!

Notes

For a sweeter version, adjust the simple syrup to taste. Ensure that the egg white is fresh and pasteurized if you have concerns about food safety. This cocktail can be made without egg white for a vegan option, but it will not have the same frothy texture.
