Ingredients
  

  • 2 oz Pisco
  • 1/2 oz Fresh Lime Juice
  • 1/2 oz Simple Syrup
  • 1 Egg White
  • 2-3 dashes Angostura Bitters
  • Ice Cubes

Instructions
 

  • In a cocktail shaker, combine the pisco, fresh lime juice, simple syrup, and egg white.
  • Add ice to the shaker until it is about half full.
  • Shake vigorously for about 15 seconds to chill the mixture and create a frothy texture from the egg white.
  • Strain the mixture into a chilled coupe glass.
  • Top with 2-3 dashes of Angostura bitters.
  • Gently stir the bitters into the froth for a marbled effect.

Notes

The egg white is used to create a frothy texture and should be fresh. Some may prefer to dry shake (shake without ice) the ingredients first to emulsify the egg white before adding ice and shaking again. Always ensure to use high-quality pisco for the best flavor.
