Ingredients
  

  • 2 oz Pisco
  • 1 whole egg
  • 1/2 oz simple syrup
  • Freshly grated nutmeg for garnish

Instructions
 

  • In a cocktail shaker, combine the Pisco, whole egg, and simple syrup.
  • Dry shake (shake without ice) vigorously for about 15 seconds to emulsify the egg.
  • Add ice to the shaker and shake again until well-chilled.
  • Strain the mixture into a chilled coupe or cocktail glass.
  • Garnish with freshly grated nutmeg on top of the froth.

Notes

The quality of Pisco will greatly affect the taste of the cocktail, so choose a good quality Pisco. Always use fresh eggs and take care when separating the yolk from the white if only using a portion of the egg. Consuming raw eggs may increase the risk of foodborne illness.
