Equipment

  • Cocktail shaker
  • Jigger
  • Fine mesh strainer
  • Coupe or cocktail glass
  • Grater

Ingredients
  

  • 2 oz Mezcal 60 ml
  • 1 whole egg about 50g
  • 1/2 oz Simple syrup 15 ml
  • Freshly grated nutmeg for garnish

Instructions
 

  • Crack the egg into a shaker and add the simple syrup.
  • Add the mezcal to the shaker.
  • Dry shake (without ice) vigorously for about 10 seconds to emulsify the egg.
  • Add ice to the shaker and shake again until well-chilled.
  • Strain the mixture into a chilled coupe or cocktail glass.
  • Garnish with freshly grated nutmeg on top.

Notes

Always use fresh eggs for a flip, and if there is a concern for raw egg consumption due to health reasons, consider using pasteurized eggs.
