  • Wine Glass or Coupe

Ingredients
  

  • 2 oz Medium Dry Sherry
  • 1 Whole Egg
  • 1 tsp Granulated Sugar
  • Freshly Grated Nutmeg for garnish

Instructions
 

  • In a cocktail shaker, combine the sherry, whole egg, and granulated sugar.
  • Dry shake (without ice) vigorously for about 10 seconds to emulsify the egg.
  • Add ice to the shaker and shake again until well-chilled and frothy.
  • Strain the mixture into a chilled wine glass or coupe.
  • Garnish with a liberal grating of fresh nutmeg on top.

Notes

The quality of the sherry will greatly affect the drink, so choose a good medium dry sherry. If you're concerned about using raw eggs, make sure to use fresh, refrigerated, clean grade A or AA eggs with intact shells and pasteurized eggs to reduce the risk of salmonella.
